  1. Boil 500ml of water in a saucepan.
  2. Once the water is boiling, remove it from heat and add the dried Butterfly Pea Flowers.
  3. Let the flowers steep for about 10 minutes to extract their color and flavor.
  4. Strain the mixture to remove the flowers, keeping the liquid.
  5. In a blender, mix together the cold water, apple cider vinegar, honey, grated ginger, lime juice and strained liquid.
  6. Blend until the mixture is smooth and fully combined.
  7. Use a fine strainer to pour the mixture into a glass, discarding any solids.
  8. Gently stir in the chopped mint leaves.
  9. Serve right away over ice if you like.
