  1. Bring 200ml of water to a boil in a pot.
  2. Add the dried butterfly pea flowers and allow them to sit in the hot water for 5 minutes. Strain the butterfly pea flowers and set aside.
  3. In a pan, heat some sesame oil over medium heat.
  4. Add the garlic and ginger and cook until fragrant.
  5. Add the prepared cubed tofu and continue to cook until the tofu is golden brown on all sides.
  6. Add the sliced shiitake mushrooms and bok choy and combine until the vegetables are just tender.
  7. Pour in the soy sauce and add any salt and pepper to taste.
  8. Serve the stir-fry hot with the pea flower drink on the side.
