  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken breasts with salt, pepper, oregano, and paprika.
  3. Add the chicken to the skillet and cook for around 5-7 minutes on each side to gold brown.
  4. Remove the chicken to a plate and set aside.
  5. In the same skillet, add the diced onion and minced garlic and sauté until the onion is translucent.
  6. Add the sliced bell pepper and zucchini and cook for 5 minutes more until the vegetables have softened.
  7. Pour in the chicken broth and bring to a simmer.
  8. Return the chicken to the skillet, cover, and simmer for an additional 15 minutes until the chicken is cooked through.
  9. Garnish with fresh parsley before serving.
