  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix together the minced garlic, chopped rosemary, thyme, salt, and black pepper with the olive oil to form a paste.
  3. Rub the garlic-herb mixture evenly all over the beef tenderloin.
  4. Heat a roasting pan over medium-high heat and sear the beef on all sides until browned, about 2-3 minutes per side.
  5. Remove the beef from the pan and place it in the preheated oven.
  6. Roast the beef for about 25-30 minutes, or until the internal temperature reaches 55°C (130°F) for medium-rare.
  7. Once done, remove from the oven and let it rest for 10 minutes, tented with aluminum foil.
  8. In the same pan used for roasting, add beef broth and Dijon mustard, scraping the bottom to create a sauce.
  9. Slice the roast beef and serve it drizzled with the sauce.
