  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine sugar and water over medium heat until the sugar dissolves and turns golden brown. Pour the caramel into the bottom of two ramekins.
  3. In a mixing bowl, whisk together coconut milk, sweetened condensed milk, eggs, and vanilla extract until smooth.
  4. Stir in shredded coconut into the mixture.
  5. Pour the coconut mixture over the caramel in the ramekins.
  6. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  7. Bake for 25-30 minutes or until the flan is set.
  8. Remove from the oven and let cool before refrigerating for at least 2 hours.
  9. To serve, run a knife around the edges and invert onto a plate.
