  1. In a heatproof bowl, combine the eggs and sugar, whisking them together until they are well mixed.
  2. Next, add the cubed butter, lemon zest, and lemon juice to the mixture.
  3. Set the bowl over a saucepan filled with simmering water, making sure the bottom of the bowl doesn't touch the water.
  4. Continuously stir the mixture for about 10-15 minutes, or until it thickens enough to coat the back of a spoon.
  5. Once thickened, remove the bowl from heat and strain the curd through a fine sieve into a clean jar to eliminate any lumps.
  6. Let it cool before sealing the jar and placing it in the refrigerator.
