- In a heatproof bowl, combine the eggs and sugar, whisking them together until they are well mixed.
- Next, add the cubed butter, lemon zest, and lemon juice to the mixture.
- Set the bowl over a saucepan filled with simmering water, making sure the bottom of the bowl doesn't touch the water.
- Continuously stir the mixture for about 10-15 minutes, or until it thickens enough to coat the back of a spoon.
- Once thickened, remove the bowl from heat and strain the curd through a fine sieve into a clean jar to eliminate any lumps.
- Let it cool before sealing the jar and placing it in the refrigerator.
