  1. Preheat the oven to 180°C (350°F).
  2. In a small bowl, mix olive oil, Dijon mustard, thyme, rosemary, garlic powder, salt, and pepper to create the marinade.
  3. Rub the herb mixture generously over both sides of the pork chops.
  4. Heat a frying pan over medium-high heat. Add the pork chops and sear for about 3-4 minutes on each side until they are nicely browned.
