Rumbledethumps is a traditional Scottish potato and cabbage dish that’s rich, buttery, and full of flavor. This comforting mash, made with potatoes, swede (rutabaga), and cabbage, is a staple in Scottish cuisine, similar to Irish colcannon and English bubble and squeak. Topped with golden, melted cheese, it’s the perfect Scottish side dish for any meal. Whether served alongside roasted meats or enjoyed on its own, this easy, wholesome dish is a must-try for fans of hearty, home-cooked food.
Ingredients
Directions
- Peel and chop the potatoes and swede into chunks. Boil them in salted water until tender, about 20 minutes.
- In the meantime, chop the cabbage finely and sauté it in a pan with a little butter until softened, about 5-7 minutes.
- Once the potatoes and swede are cooked, drain them and return them to the pot.
- Add the sautéed cabbage, remaining butter, and milk to the potatoes and swede. Mash everything together until smooth and creamy.
- Season with salt and pepper to taste. If desired, fold in the grated cheese for added flavor.
- Transfer the mixture to a baking dish, smoothing the top with a wooden spoon.
- Place the baking dish under the broiler for about 5-7 minutes, or until the top is golden and slightly crispy.
