  2. Add the chicken thighs and brown them on both sides for about 5 minutes each.
  3. Once browned, remove them from the pot and set aside. In the same pot, toss in the chopped onion, garlic, carrots, and celery.
  4. Sauté these vegetables until they soften, which should take around 5-7 minutes.
  5. Next, add the diced potatoes, chicken broth, thyme, bay leaf, salt, and pepper, stirring everything together.
  6. Place the browned chicken thighs back into the pot, skin side up. Bring the stew to a boil, then lower the heat and cover.
  7. Let it simmer for 30-35 minutes, or until the chicken is fully cooked and tender.
  8. Afterward, take out the chicken, shred the meat, and discard the skin and bones.
  9. Return the shredded chicken to the pot and give it a good stir.
  10. Taste the stew and adjust the seasoning if needed.
  11. Serve it hot, garnished with fresh parsley.
