  1. Cook the fettuccine pasta according to the package instructions until it is al dente, then drain it and set it aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté it for about a minute until it is fragrant.
  4. Add the shrimp to the skillet and cook them for 2-3 minutes on each side until they turn a lovely pink and are fully cooked.
  5. Once done, remove the shrimp and set them aside.
  6. In that same skillet, pour in the almond milk and bring it to a gentle simmer.
  7. Add the Parmesan cheese, black pepper and salt to the skillet and stir until the cheese melts and the sauce becomes nice and smooth.
  8. Add the cooked fettuccine and shrimp back into the skillet, toss everything together to coat it in that delicious sauce.
  9. Let it cook for another 2 minutes to heat through.
  10. Serve it hot, garnished with some chopped parsley for that extra touch!
