  1. Start by preheating your oven to 375°F (190°C) and lining a baking sheet with parchment paper.
  2. In a mixing bowl, combine all-purpose flour, cubed butter, granulated sugar, and salt.
  3. Use a fork or pastry cutter to mix until the mixture looks like coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until the dough forms a ball that is moist but not sticky.
  4. Next, divide the dough into two equal portions and roll each out to about 1/8-inch thick on a floured surface. Cut the rolled dough into rectangles, roughly 4x6 inches. Place half of these rectangles on the prepared baking sheet and spoon about 1 tablespoon of fruit jam into the center of each, making sure to leave a border.
  5. Cover them with the remaining rectangles and press the edges with a fork to seal.
  6. Brush the tops with a beaten egg and poke a few holes for steam to escape. Bake in the preheated oven for around 20 minutes, or until they turn golden brown.
  7. While the pop tarts are baking, prepare the icing by mixing powdered sugar, milk, and vanilla extract in a bowl until smooth.
  8. Once they are baked, allow them to cool slightly before drizzling the icing over the tops.
