- Start by preheating your oven to 375°F (190°C) and lining a baking sheet with parchment paper.
- In a mixing bowl, combine all-purpose flour, cubed butter, granulated sugar, and salt.
- Use a fork or pastry cutter to mix until the mixture looks like coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until the dough forms a ball that is moist but not sticky.
- Next, divide the dough into two equal portions and roll each out to about 1/8-inch thick on a floured surface. Cut the rolled dough into rectangles, roughly 4x6 inches. Place half of these rectangles on the prepared baking sheet and spoon about 1 tablespoon of fruit jam into the center of each, making sure to leave a border.
- Cover them with the remaining rectangles and press the edges with a fork to seal.
- Brush the tops with a beaten egg and poke a few holes for steam to escape. Bake in the preheated oven for around 20 minutes, or until they turn golden brown.
- While the pop tarts are baking, prepare the icing by mixing powdered sugar, milk, and vanilla extract in a bowl until smooth.
