This is the recipe for Tomato Basil Soup, rich and velvety, just what one wants in a homely meal.   1. Heat the olive oil in a pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Chop the ripe tomatoes and add them to the pot, cooking for about 5 minutes until they start to soften.
  4. Pour in the vegetable broth and bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
  5. Remove from heat and allow to cool slightly, then blend the mixture in a blender until smooth.
  6. Return the blended soup to the pot, stir in the heavy cream, and season with salt and pepper. Heat through for an additional 5 minutes.
